There’s just something about eating short ribs.
Whether they are English cut with a savory red wine braise, or an Asian sticky, spicy, sauce and flanken style, they are all EXCELLENT. I’ve been exploring the world of short ribs lately and can say from all the taste testing, “we are not worthy.”
This past week, I had some fun in the kitchen making these marinated flanken style short ribs and added some fluffy white rice topped with teriyaki sauce to compliment. You have to give a lot of patience and love to make these perfect, but it’s well worth it. Pour a glass of wine, pint of beer…or a cocktail, and enjoy.
Here’s how to make it:
Ingredients:
- 1 & 1/2 pound flanken style short ribs
- 1 packet of Omsom Spicy Bulgogi Sauce
- 1/4 cup of teriyaki barbecue sauce ( I used Bachans’) and extra for topping
- 1 tablespoon of black peppercorns
- 1/8 cup good olive oil
- 1 tablespoon of black garlic
- 1 tablespoon of onion powder
- 2 tablespoons of Worcestershire
- 1 jalapeño
- 1/2 cup white rice
- 1/3 cucumber
- Small handful of cilantro (and extra for topping)
- Sesame seeds
The recipe:
To start, in a large plastic bag or reusable bag, add the short ribs. Then add in the packet of Omsom spicy bulgogi sauce, then the cilantro, teriyaki sauce, black peppercorns, onion powder, black garlic and Worcestershire sauce. Then add in half a jalapeño and olive oil. Close bag, then shake to combine. Marinate in fridge from 8-24 hours.
Turn on oven to 400 degrees F. Then in a hot pan add the marinated ribs along with the marinade. Cook meat until sauce starts to boil and caramelize. Pull out cooked ribs and place into baking dish. Add into oven for 5-10 minutes and then add the marinade.
Meanwhile, make white rice and prep the cucumber and leftover jalapeño and cilantro.
Once ribs are fully cooked through, pull out of oven and let it rest. Add a portion of cooked rice to a bowl, then pull out a rib or two an remove from bones, slice and add on top of rice, then add cucumber and jalapeño. Finish with cilantro, teriyaki barbecue sauce and sesame seeds.
